Tortilla Soup Recipe

Commonly used for making yummy Mexican dishes such as enchiladas, burritos and tacos, tortilla can also be used to prepare cheap, simple but very tasty soup dishes. One of them is an appetizing tortilla soup recipe that is made up of fresh, healthy and easy-to-find ingredients. Perfect for people who are always on the go, this delicious homemade recipe is quick and easy to prepare because it makes use of traditional cooking ingredients like chicken, tomatoes and cloves garlic.

Ingredients

In order to enjoy this special spicy treat, you first need to prepare all the necessary ingredients. These include 1/3-cup of chopped small onion, ¼-cup vegetable oil and 6-pieces of 6-inch corn tortillas. Likewise, be sure to bring in 1½-cups of shredded cooked chicken, ½-teaspoon of coarse salt and 2-pieces of finely chopped cloves garlic. To give the dish a unique spicy taste, prepare a medium-sized Anaheim pepper, a poblano or seeded jalapeno chile.

For this tasty tortilla soup recipe, you also need a 14.5-ounce can of Muir Glen organic fire roasted diced tomatoes, a 32-ounce carton of reduced-sodium chicken broth and a medium-sized ripe avocado. Lastly, be sure to buy a piece of lime, a piece of fresh cilantro and ½-cup of shredded Monterey Jack cheese.

Steps

Get the tortillas and then cut them into ¼-inch strips. Set the stove to medium-high heat. Put a 3-quart saucepan on top of it. Pour in the vegetable oil. Fry the tortillas until they become crispy and light brown in color. Remove them right away. Top a clean plate with paper towels and then drain the strips.

Put the saucepan with oil back to the stove. Add the chopped onion and cook it for about 2 minutes. Do not forget to stir it frequently. After that, add the chile and garlic. Once they acquire a crisp-tender texture, add the salt, tomatoes and broth right away. Cook the dish until it boils. Lower the heat and cover the pan. Allow the dish to simmer for about 15 minutes. Put the chicken in as well. When the chicken is hot, you can now turn the stove off.

To serve this great-tasting dish, get the avocado and then peel it. Remove the pit and then cut gently into 1-inch slices. Serve the soup in four serving bowls. Top each of them with cheese and avocado. Add the cilantro as well as the tortilla chips. Cut the lime into wedges and then serve at least one wedge for each soup. This simple but delicious recipe is good for four people.
