Potato Salad Recipe

Potato salad recipes are among the most versatile of meals. As you’ll see, it doesn’t take a lot to add more exciting flavors to this dish.

Potato Salad with Mustard


2 lbs of red skinned potatoes (small, cubed)
1 ½ cup of carrots and peas (frozen)
½ cup of red onion
2 tbsp of olive oil
1 tsp of chives (snipped)
1 dried leaf thyme
1 red bell pepper (chopped)
Juice of 1 lemon
1 freeze dried dill
2 tbsp of mustard
½ tsp of salt
½ tsp of pepper


Place the potatoes in a sauce pan with some water. Boil it. Put the cover on and keep cooking for another 15 minutes. Discard the water and let the potatoes cool. For this potato salad recipe, you need to mix the chives and thyme.

Add the onion, potatoes, bell pepper and the rest of the vegetables. Add the pepper. Put the mustard in a cup. Put the olive oil and lemon juice there. Stir this and pour over the potato mixture. Add salt and pepper to taste.

Potato Salad with Sweet Pickles


½ cup of celery
¼ cup of red onion
3 eggs (hard cooked)
½ tsp of salt
2/3 cup of mayonnaise
1/8 tsp of ground black pepper
2 tsp of sweet pickle juice
3 tbsp of sweet pickles (chopped)
5 cups of cooked red potatoes


Cook the potatoes. Drain it and let it cool. Put it in a bowl with all the other ingredients. Toss and mix this tasty potato salad recipe. Put in more mayonnaise if necessary.

Potato Salad with Tomatoes


1 cup of mayonnaise
Salt and pepper
3 lbs of red potatoes (cooked, cubed and cooled)
6 eggs (hard cooked and chopped)
¼ cup of red onion
½ cup of celery (chopped)
1 cup of tomatoes (sliced thin)
½ cup of cucumber (sliced)
2 tbsp of prepared mustard


Put the potatoes in a bowl. Add the celery and red onions. Add the mustard and mayonnaise. Put these in slowly, just enough until you get the desired consistency. Add any more vegetables you like. Toss the ingredients. Add the tomatoes and cucumber on top of this potato salad recipe.

Potato Salad with Vinegar


1 cup of mayonnaise
1 tsp of sugar
2 tbsp of vinegar
6 potatoes (medium, cooked and cooled)
1 cup of celery (sliced)
3 hard boiled eggs
2 tsp of salt
½ cup of onion (chopped)
1 tomato (cut in wedges)


Mix the mayonnaise, vinegar and sugar. Add the salt and pepper. Mix thoroughly and toss in remaining ingredients. Add more mayonnaise to get the desired consistency. Put a cover on the bowl and chill for two hours. When it’s ready to be served, add some tomatoes. You can also add some minced onions on the salad. Add more salt and pepper if needed.
