Ingredients

Considered healthy food because of its high iron content, shrimp is a traditional ingredient that people use at home. For this quick homemade recipe, you need to prepare at least a pound of fresh shrimp. Aside from this, you have to bring in 2-cups of cooking oil, a cup of seltzer water and ½-teaspoon sugar. In addition, prepare ¼-teaspoon of onion powder, ¼-teaspoon garlic and ½-teaspoon salt. To make the dish more enticing, it must also have ½-teaspoon paprika, ½-teaspoon baking soda and ½-teaspoon cream of tartar. In addition, be sure to in 1/3-cup of Martha White’s Buttermilk Cornbread Mix as well as 1/3-cup of flour.

Steps

Set the stove to medium heat. Put the pan on top of it. Pour in the cooking oil and let it heat up for a while. After that, test the oil if it is hot enough by putting a single shrimp inside the pan. Cook it for about 2 to 3 minutes. If within that specific time range the shrimp acquires a golden brown color, the hotness of the oil is just enough.

Next thing to do is the batter. Get a nice clean bowl and then pour in all the dry ingredients like the onion powder, garlic and sugar. Next, add the salt, paprika and baking soda. Follow them with the cream of tartar, buttermilk cornbread mix and flour. Mix thoroughly until the ingredients are distributed evenly.

Right at the center of this dry mixture, slowly pour the seltzer water. In order to prevent lumps, use a whisk to mix it. Stir lightly until it becomes smooth. Be sure not to overbeat it. In the end, its consistency must resemble that of pancake batter. Aside from all-purpose flour, you can also use cake flour, which is probably better especially for those who are likely to make tough tempura. Submerge the shrimps right into the mixture. After that, drain them for about 10 seconds. Put them into the pan. Once they acquire a golden brown color, remove from the pan right away and then place them on top of a paper towel. Serve the drained shrimps on a nice clean plate.

For the onion rings, get 2-pieces of Vidalia onions and then slice them finely to create rings. Dip the rings in the same batter that was used for the shrimps. Fry them until golden brown. Drain on top of a paper towel. Arrange them in the same plate together with the shrimps. For the dip, serve the dish with tartar sauce or cocktail sauce and enjoy.
