Ground Beef Casserole Recipe

Ground Beef Casserole with Tortilla Chips


1 lb of lean ground beef
1 tbsp of olive oil
2 cans (15 ounces) of pinto beans (drained)
1 onion (medium, chopped)
1 red bell pepper
2 garlic cloves (minced)
6 ounces of tortilla chips
2 cups of cheddar cheese (shredded)
2 cans of chill tomatoes
2 tsp of chili powder
1 tsp of ground cumin


Begin this simple ground beef casserole by preheating the oven to 350 degrees and grease a 2 ½ quart casserole. Set a skillet to medium heat and brown the beef, onion and oil. Keep cooking until the beef’s pink color dissipates.

Add the garlic and bell pepper. Stir it until the bell pepper softens. Then you can add the pinto beans, cumin and chili powder. Continue stirring until the mixture becomes hot.

Add the rest of the ingredients minus the cheese. Add in the rice and stir it. Pour this in the casserole. Bake this for about 25 minutes. Add the shredded cheese on top. Cook it for 5 minutes.

Casserole with Macaroni


8 ounces of elbow macaroni
2 tbsp of olive oil
2 green bell peppers
1 cup of onion (chopped)
3 garlic cloves (sliced)
1 lb of lean ground beef
2 cans of tomato juice
2 tsp of tomato paste
3 cups of cheese (shredded)


Sauté the onion, garlic and peppers. Add the vegetables and stir. Add the beef when the onion gets hot. Toss in the tomato juice and paste when the beef tenderizes. Set heat to low and simmer for 10 minutes. Add the cheese. Put in a baking pan and bake for 30 minutes (350 degrees). Put more cheese as topping.
