Chicken Marsala Recipe

Sure, most of the recipes that you may find use half chicken breasts that you still need to prepare by removing its skin and pounding it to perfection. But there’s an easier way to prepare this dish and still make it juicier and moister.

Here’s how:

Have Your Ingredients Ready.

For this, you would need a host of ingredients. This includes the following:

Four boneless chicken breasts with the skin still on, four slices of Italian bread, salt and pepper to taste, olive oil (about two tablespoons), eight large sliced white mushrooms, one shallot (preferably, minced), a clove of garlic (minced), one and one half tablespoons of flour, one and one half cup of Marsala wine (the regular version), two and a half cups of chicken stock, three tablespoons of chilled butter (cut in tiny pieces), and two tablespoons of fresh chopped parsley.

Prepare the Chicken.

Toast the Italian bread. Set aside.

Then, evenly season your chicken breasts on each side. In a large skillet, using medium fire, heat the olive oil and place your chicken in – skin-side down. Fry for about five minutes before turning. Cook the other side for another five minutes. Remove and transfer to a plate.

Prepare the Sauce for Your Chicken.

In a hot pan, add your mushrooms and a pinch of salt. Slowly reduce the heat to medium fire while cooking the mushrooms until the mushrooms become brown in color. Add garlic, flour, and shallots. Stir and cook for three minutes.

Slowly and carefully add the Marsala wine. Be really careful with this because this procedure may flame up. Increase the heat to high. Stir for two minutes before adding the chicken stock. Cook for about three minutes or until you notice the sauce thicken.

Turn the heat very low. Add the chicken breast to reheat it. Toss the sauce to coat the chicken.

After that, turn off the stove.

To plate this, place each chicken breast on a slice of toasted bread. Add parsley and butter to your hot sauce. Whisk. Add salt and pepper to taste. And spoon this on top of your chicken. And you’re done!
