Carrot Cake Recipe

Tasty carrot cake recipes can come in many forms. If you’ve never tried making carrot cake before, you can start with the following.

Pineapple Carrot Cake


3 cups of all purpose flour
½ tsp of salt
1 tsp of baking soda
2 ½ cups of carrots (grated)
2 cups of sugar
½ lemon extract
1 cup of pineapple (drained)
1 cup of pecans (crushed)
1 ½ tsp of vegetable oil
2 eggs (beaten)
3 tsp of vanilla extract


Pour all the dry ingredients in a bowl including the carrots, oil and eggs. Stir it well. Toss in the other ingredients. Stir the mixture and pour in a loaf pan (9 x 5 x 3”). Bake this simple carrot cake recipe for an hour at 350 degrees. Let it cool down for a couple of minutes. Add some cream cheese for the toppings.

Carrot Cake with Raisins


4 eggs
¾ cup of vegetable oil
3 cups of all purpose flour
1 tbsp of baking soda
1 tsp of salt
16 ounce jar of applesauce
1 tsp of ground cinnamon
2 ½ cups of sugar
1 tsp of vanilla
3 cups of carrots (shredded)
1 tsp of nutmeg
1 cup of raisins
1 cup of pecans


Start by preheating at 350 degrees. Sift the baking soda, flour, cinnamon and salt. Continue making this carrot cake recipe by adding the nutmeg to this mix. Continue sifting the ingredients. Get a bowl and add the eggs, sugar, vanilla and oil. Stir it and then toss in the applesauce and carrots. Combine this with the sifted ingredients.

Pour in the raisins and pecans. Mix everything and pour in a 10 inch tube pan. Spray a little bit more of the pecans on top of the batter. Bake the cake for an hour. Let it cool down for a few minutes.

Cocoa Carrot Cake


½ cup of cooking oil
1 cup of granulated sugar
1 ½ cups of carrots (grated)
1 cup of boiling water
1 tsp of salt
1 ½ tsp of baking soda
1 ½ cups of whole wheat flour
1 tsp of ground cinnamon
½ cup of cocoa (for this carrot cake recipe, the unsweetened type is needed)


Prepare a mixing bowl. Put the sugar, oil and carrots in it. Put some water into the mix. Set it aside for now. Get another bowl and toss in the flour, baking powder, cinnamon and cocoa. Add some salt too. Add this to the mixture in the other bowl. Mix this and pour into a pan. An 8” pan (oiled) is recommended.

Bake the cake for an hour at a temp of 350 degrees for 35 minutes. When it’s cooked, add some cream cheese as icing. You can also use ice cream as frosting.
