3 tbsp of oil
6 cups of chicken broth
12 shrimps (medium)
3 cups of pumpkin (peeled)
1 cucumber (cut into bite size)
1 bell pepper (small, cut up)
1 red chili pepper (sliced)
3/4 tsp of shrimp paste
1/3 cup of onion (chopped)
3 kaffir lime leaves (get these in stores under the Asian food section)
3 garlic cloves (minced)
2 tbsp of lime juice
3 tsp of sugar
½ cup of coconut milk (thick)
2 tbsp of fish sauce
1/3 cup of fresh basil


Start this pumpkin soup recipe by putting the oil in the soup pot. Toss in the garlic, pepper and onion. Fry it for a couple of minutes. Toss in the kaffir lime leaves and the broth. Boil it and then add the pumpkin. Reduce heat to medium. Let this simmer for 8 minutes. Add the shrimp paste, sugar and lime juice. Pour in the fish sauce as well.
