Squash casserole recipes vary, and some are easer to make than others. The following recipes are simple enough, but their taste will leave you yearning for more.
Squash Casserole with Buttered Bread Crumbs
2 lbs of yellow squash (cut to ¾”)
¼ tsp of freshly ground pepper
1 tsp of salt
½ cup of milk
4 tbsp of butter
1 ½ cups of cheddar cheese
1/3 cup of buttered bread crumbs
1 cup of saltine crackers (crushed)
1 cup of onion (chopped)
Place the squash and onion in a saucepan. Add salt and pepper to give some zest to this simple squash casserole recipe. Pour a little bit of water. Cover and cook until the squash becomes tender.
Add more water if needed and stir every now and then. Remove the onions and squash. Remove the water. Put the onions and
squash back in the pan. Add the butter and stir.
Butter a baking dish (1 ½ quarts). Add the crackers to the squash mix. Pour into the baking dish. Pour the milk all over it. Put in the cheese and the bread crumbs. Bake it for 20 minutes at 350 degrees. Serve this squash casserole recipe hot.
Summer Squash Casserole
3 eggs (hard cooked)
2 eggs (beaten)
3 cups of summer squash
3 tbsp of butter
1/3 cup of milk and cream
¼ cup of bread crumbs
1 tbsp of butter
Butter the bread crumbs. Put some butter on a skillet and sauté the onion. Mix the onions and squash in a bowl. Chop the eggs and add to the squash. Mix it and transfer to a casserole. Combine the beaten eggs with the half and half. Sprinkle this over the casserole. Bake for half an hour at 350 degrees.
Easy Squash Casserole
2 cups of squash (mashed)
½ cup of milk
2 tbsp of butter
½ tsp of salt
½ tsp of pepper
1 cup of crackers (crushed)
Begin this squash casserole recipe by mixing the milk, squash and butter. Mix and add the eggs, salt and pepper. Grease a baking dish with butter. Add the bread crumbs to the baking dish. Bake this for half an hour until it browns. Combine the remaining squash with an egg. Add ½ cup of milk and a bit of flour. Mix this and fry. Serve with the squash.
Casserole Squash with Sour Cream
2 lbs of squash
1 onion (chopped)
2 jalapeno peppers (chopped)
4 ounce can of green chiles
1 cup of sour cream
8 ounces of cheese
1 ½ cups of tortilla chips (crushed)
Put the squash and onions in a casserole. Cook for 10 minutes (high). Toss in the cheese, pepper, chile and sour cream. Put the tortilla in a baking dish. Pour the mix there. Cook in a microwave at medium high for 10 minutes. Rotate it one time.
