Bacon is known for its enticing taste, rich flavor and crunchy texture. You can easily turn this seemingly simple ingredient into a delectable treat by combining it with other cheap, fresh and easy-to-find ingredients. Bacon Vinaigrette and Roasted Potato Salad
One of the best ways of preparing bacon is to serve it with healthy ingredients such as potatoes. For this easy dish, prepare at least 2-pounds of potatoes. You will also need a teaspoon of cracked black pepper as well as a teaspoon of sea salt. Likewise, bring in 2-tablespoons of chopped Italian parsley, 2-tablespoons of wine vinegar and 2-tablespoons of whole-grain Dijon mustard. This special homemade dish also needs a pinch of red pepper flakes, a tablespoon of fresh rosemary leaves and a cup of extra virgin olive oil.
For this recipe, you also have to prepare other traditional ingredients like 3-pieces cloves garlic. Peel all three and then chop them finely. Get 2-pieces shallots, peel and chop them finely as well. More importantly, get five slices of bacon. Saute them until crispy.
Once the ingredients are set, you can begin with the cooking process. Set your oven to 450 degrees Fahrenheit. Get the potatoes and then scrub them thoroughly. Cut them into smaller chunks, preferably into 1½-inch pieces. Prepare a clean cookie sheet and then set it on top of the pan. Position the potatoes to layers. In case you are using new potatoes, it is possible not to peel them anymore. Pour ¼-cup of the olive oil. Sprinkle the rosemary, cracked pepper and sea salt lightly into the dish.
Put the pan inside the preheated oven. Let the potatoes roast for around 25 minutes. Be sure to stir the dish at least once or twice. In case the potatoes look very dry, spray some olive oil. At this point, it is good to lower the heat to around 400 degrees Fahrenheit.
Take the pan out of the oven. Get a nice clean bowl and then place the dish in it. Turn the stove to medium-high heat. Place a skillet on top of it. Pour in some olive oil and then slowly add the shallots and bacon. Sauté and add the chopped garlic. It is not good to wait for the garlic to turn brown for this particular recipe. Add the vinegar, mustard as well as the remaining olive oil. Put the remaining salt and pepper. Crush the bacon and then stir right onto the vinaigrette. It is best to serve this dish while hot.
