1 lb of broccoli
3 cups of onions
1 tsp of leaf oregano (crushed and dried)

6 tbsp of butter
6 to 8 cups of chicken broth
Slice off the broccoli’s florets. Chop into small pieces. Place them in salted water for 2 minutes and then place it in cold water. Slice the stalks and set them in a saucepan. Toss in the onions and 3 tbsp of butter in the pan. As with other broccoli cheese recipes, you should sauté it for 5 minutes (medium heat).
Now throw in the oregano and broth. Allow it to simmer for half an hour. Process the concoction in a blender. Put the remaining tablespoons of butter in a saucepan. Add some flour and stir until the mixture turns smooth.

2 lbs of broccoli
4 tbsp of flour
5 cups of chicken broth

3 tbsp of butter
1 cup of Swiss cheese
¼ tsp of ground nutmeg
Slice the broccoli florets and put them in two cups. Chop the remaining broccoli into inch long pieces. Cook the florets and broccoli in separate pans in salted boiling water for a couple of minutes. When it’s tender, stop cooking and soak with cold water. Drain it. Put the onions in another saucepan with the butter. Cook for two minutes.
Toss in the flour and cook for 60 seconds. Take it away from the heat. Stir the broth and place it back on the heat. This broccoli cheese recipe requires the broth to be boiled. Next, reduce the heat and let it simmer for 5 minutes. Stir it every now and then.
Pour the broccoli in the broth.
Put the mix in a blender (do this in batches). Blend it until the concoction becomes smooth. When it’s smooth, place it back in the pan. Add some Swiss cheese prior to serving. You can also add some cream. Let it simmer until the cheese has melted. Toss in a few more florets and serve it.
You can use other spices and seasonings for either recipe. You can add some celery, creamy cheese or milk and butter. Yosu can also cook this in a crockpot. It will cook in three hours on a low setting.
